Since moving to Clifden, the capital of Connemara, mere months before the pandemic began, I have learnt lessons about alfresco cooking and eating and, in particular, seaside snacking.

Similar to the overeager new gym-goer, my first instinct was to go all out on the gear. My enthusiasm brought me to Stanleys, a sixth-generation family-run business that supplies the town and its visitors with gorgeous indoor, outdoor, knit, tweed, rainproof and camping gear. It was here that I picked up my little portable stove hob, which I called Harry (I named a lot of inanimate objects during the lockdowns — I was starved for company). I couldn’t wait to bring Harry on the next outing with my socially distant sea-swimming buddies, the Dolphins.
